We work with coffee farmers in all sectors.

Roasting Profiles: we use an air roaster & this is what we’ve found:

1. Dondon & 2. the Artibonite are classic Caribbean in every sense -- chocolatety sweet with mellow citrus-highlights. It’s a perfect cup for those who like to ease into the day or relax with coffee after work. These coffees excel at a City roast.

3. Pine Forest: when roasted to just under a Full City – this coffee reveals a rich, chocolate-caramel flavor.

4. FJN: when roasted to a Full City – this coffee reveals a black currant flavor.

5. Tete Source: when roasted to 2nd crack in the cooling bin – this coffee reveals a chocolate-cherry flavor.

Haitian coffee makes the PERFECT base for espresso applications. Try a mélange of 70% Haitian & then add other origins depending on your desired outcome.

Home roasting has been practiced for centuries - think cast iron skillets over open fires.

You can still use a skillet or even an old-school air popcorn popper; maybe you're the appliance type & you'll invest in a home coffee roasting machine.

No matter how you do it, home roasting is fun & produces the freshest coffee possible (not withstanding the Rooster, of course).

Singing Rooster is a registered 501 (c)3 nonprofit and established social enterprise. We provide on-the ground assistance and direct market access to coffee farming communities in Haiti for the sake of self-sustainability, dignity & economic autonomy. We meet then EXCEED principles of fair trade.

We partner with small scale, farmer-owned cooperatives to help cultivate and process high quality, gourmet Haitian coffee. Then we buy / export crops at premium prices and create new markets for it: roasted coffee, green coffee beans for home or commercial roasters, fundraising with coffee, and wholesale coffee to commercial roasters, cafes, and stores.

By helping farmers to improve crops, paying premium prices for those crops and then transforming and marketing those crops on behalf of farmers, we've created a direct farmer-to-table model for rural communities. We return 100% of proceeds of coffee sales back to farmers and their communities for continued economic development.
